About Jean-Georges

Jean-Georges Vongerichten opened this room in 1997 inside the Trump International Hotel, and it has spent every year since proving that restraint is harder than excess. The kitchen builds dishes around two or three ideas at most — a citrus, a spice, a fat — and lets each one carry, which is why a plate as simple as sea bass in a nage tastes like it took a decade to get right, because it did.
