Disfrutar is playful only because the technique is so secure. Oriol Castro, Eduard Xatruch, and Mateu Casañas take the El Bulli inheritance seriously without embalming it: multi-spherification, frozen textures, hidden broths, and trompe-l'oeil snacks are deployed in service of momentum rather than nostalgia. The Eixample room is bright and open, which makes the menu's tricks feel more direct. Three stars and a World's 50 Best title have not made it stiff; the pleasure is still in being surprised and fed well at the same time.
